Step 1: Ingredients display, cucumber wash and set aside, mushrooms, green onions, ginger peeled and set aside, sugar, light soy sauce, balsamic vinegar
Step 2: Wash the cucumber, put it on the cutting board, and then put 2 chopsticks on both sides of the cucumber to clamp the cucumber; Cut the cucumber into slices at an angle of 45 degrees with the blade and chopsticks, and stop when you reach the chopsticks, without cutting it.

Step 5: Put the cut cucumber into a large bowl, add salt and marinate for 20 minutes.
Step 6: When marinating cucumbers, we will prepare the sauce, and cut the mushrooms, ginger, green onions, and chili peppers into shreds. (Soak the dried chili peppers in warm water for a while and then cut them into shreds, which is easy to cut, and it is not easy to change color when stir-frying)
Step 7: Heat oil in a pot, add green onion and ginger shreds and stir until fragrant.
Step 8: After stir-frying the fragrance, add shredded pepper and shredded mushrooms and continue to stir-fry over low heat to bring out the fragrance.
Step 9: After the seasoning has a rich fragrance, add 2 teaspoons of light soy sauce
Step 10: Add 2 tablespoons of sugar. Add sugar and stir-fry evenly.
Step 11: Finally, add balsamic vinegar and stir-fry evenly.
Step 12: Turn off the heat when it boils, and the sauce is ready. (When the sauce is dressed, you can also put some monosodium glutamate and chicken powder according to your habits to improve the freshness)
Step 13: Squeeze out the pickled cucumber and put it in the crisper box. Pour the sauce over the cucumber and marinate again for 1 hour before serving.
