【Braised pork trotters】

Ingredients: 800 grams of pig's trotters.

Ingredients: 40 grams of peanut oil; salt 3 g; 20 grams of rock sugar; 15 grams of light soy sauce; 6 grams of braised soy sauce; 40 grams of cooking wine; 1 piece of ginger; 3 star anise; 1 cinnamon; 1 grass fruit; 5 bay leaves; 3 grams of dried chili flakes.

Step 1: Prepare the ingredients first, the spices I use are relatively common, you can buy them in supermarkets or ordinary dry goods stores, and remove the seeds inside before the grass and fruit are put into the pot.

Step 2: Let the store burn the pig's hair, chop the bones, come back and scrape the surface with a knife first, clean it, cut it into large pieces, put it in the pot, add ginger slices and cooking wine, boil over high heat, skim off the foam, pick it up and rinse it again, and drain the water.

Step 3: Do not put oil in the pot, put in the pig's trotters and burn for a while, so that it tastes more fragrant, fat but not greasy.

Step 4: Heat the oil, add the rock sugar, turn to medium-low heat, and stir-fry until the sugar is colored. The pig's trotters made by stir-fried sugar are bright and attractive, and the taste is better.

Step 5: Add the pig's trotters and stir-fry for a while to coat the pig's trotters with sugar.

Step 6: Add star anise, cinnamon, ginger slices, bay leaves, grass fruit and stir-fry until fragrant, then add light soy sauce, cooking wine, and braised soy sauce and stir-fry well.

Step 7: Transfer to a casserole, pour in an appropriate amount of hot boiling water, and simmer over medium heat for 80 minutes.

Step 8: Pour into a wok, turn to high heat, add dried chili peppers and salt and stir-fry well, cook until the soup is thick, and then you can enjoy it out of the pan.
