【Mapo Tofu】

Ingredients: 1 piece of tofu, 100g minced meat, 1 shallot, 3 cloves of garlic, 1 spoonful of dark soy sauce, 1 spoon of bean paste, a little pepper, 1 spoon of sugar, a pinch of salt, half a bowl of water starch, appropriate amount of water


Method:

1. Prepare the ingredients: chop the pork into minced meat, and you can also buy ready-made minced meat. A piece of northern tofu, most of the traditional mapo tofu is southern tofu, and I prefer the northern tofu brine aroma.


2. Pour an appropriate amount of oil into the pan and stir-fry the minced meat until it changes color and is slightly yellow. Add a spoonful of Pixian bean paste, minced garlic and green onions, and stir-fry the red oil.


3. Add another spoonful of dark soy sauce, a little sugar and salt and stir well. Pour in an appropriate amount of water and boil for 5 minutes.



4. Cut the tofu into 2CM pieces and pour it into the pot, turn to medium heat, cover the pot and simmer for 10 minutes.


5. Finally, pour in starch water, stir slightly, and cook for 1-2 minutes.
