【Homemade Amber Pearl】
Ingredients required: 70 grams of brown sugar, 200 grams of tapioca flour, 130 grams of water, 1 bag of peach black tea
1. Pour 70 grams of brown sugar and 130 grams of water into a small pot, heat over medium heat until boiling, then turn to low heat, and cook until the brown sugar is completely melted
2. After the brown sugar is completely melted, we first pour in 50 grams of tapioca flour, stir quickly with a manual whisk, and turn off the heat after stirring. It doesn't matter if there are pimples during the stirring process, when you knead them later, you will knead them evenly. When many people do this step, they like to mix the hot water directly with all the tapioca flour, in fact, this is wrong, because when the temperature of the hot water does not reach 100 degrees, if you add tapioca flour, it will easily form a non-Newtonian liquid, and no matter how you knead it, it will not be formed. The correct way should be to heat the liquid to boiling, do not turn off the heat, keep the temperature with low heat, and then pour a small part of tapioca flour for gelatinization and blanching, and then mix the gelatinized batter with the remaining tapioca flour, it is easy to knead into a ball, and there will be no dry cracking, this is because the partially gelatinized tapioca flour will have better moisture retention after being blanched at high temperature
3. Then pour in the remaining 150 grams of tapioca flour, mix roughly with a silicone spatula, pour it on the kneading panel, and choke the tapioca flour into it by kneading, rubbing and grabbing until a smooth dough is formed.
4. Divide the kneaded dough into 6 equal parts, cover with plastic wrap to prevent it from being air-dried, and then we take a small dough and roll it into long strips, the thickness is arbitrary
5. Then use a knife to cut into small particles, after cutting, knead these small particles into a circle one by one, and the remaining dough is operated and shaped in turn. If you want to save trouble, you don't need to rub the round, after all, you can make it at home and eat it, and sometimes you don't need to be too particular
6. Put the kneaded pearl embryo into the bowl, then add a little tapioca flour to it, and shake it evenly, so as to prevent the pearls from sticking together. The finished pearl embryo needs to be frozen, and the next time you want to eat it, you can directly take it out of the hot water and cook it in the pot without thawing.
7. Pour half a pot of water into the pot, and the amount of water must be large, because the time to boil the pearls is relatively long, and you can't add water halfway, because adding water halfway will cause the boiled pearls to taste hard. Then we put another black tea bag, boil the water on high heat, and cook for another 2 minutes. There are 2 reasons for adding tea here, one is to make the boiled pearls taste better, I used peach black tea bags today, so the pearls boiled in this way will also have a peach black tea fragrance, and the second is that the color of the pearls boiled in black tea water will also be better.
8. After 2 minutes, we pour in the pearl embryo, cook on high heat until it floats, cover the lid, turn to medium heat and cook for another 18 minutes. Turn off the heat after 18 minutes, don't open the lid at this time, and use the residual temperature to let it sit for another 20 minutes
9. Finally, take out the ripe pearls, and after a little ice water or cold boiled water, the taste will be more Q elastic. Soft and chewy, it is so good to use with milk tea, it is worth your try!

1. Tapioca flour is the key material for making pearls, and it cannot be replaced by other starches, because only pearls made with tapioca flour will be chewy
2. When the brown sugar water is boiled, do not turn off the heat, but use low heat to maintain the temperature, so that the tapioca flour can be better gelatinized successfully. Otherwise, a slight decrease in the temperature of the liquid may lead to the occurrence of non-Newtonian liquids
3. If you want to make black pearls, then when boiling pearls, put a few pieces of brown sugar into the pot, so that the boiled pearls are black
4. Before cooking, the frozen and sealed refrigerator can be stored for 1 month, but the boiled pearls are best eaten on the same day, and it is not easy to refrigerate and store, which will easily lead to a hard taste.
