Steps:


1. Put the frozen crayfish and shrimp tails in clean water, thaw them naturally at room temperature, completely dissolve the shrimp tails, remove them, wash them, drain the water and set aside. The spicy butter hot pot base is generally sold in supermarkets.


2. Cut the garlic into minced pieces, cut the coriander into small pieces, and I used 2 tablespoons of the spicy hot pot base, or you can put it according to your personal taste, and put a little more if the taste is heavy.


3. Add water to the pot and bring to a boil, blanch the shrimp tails, boil for 2-3 minutes after the water boils, remove the shrimp tails, drain the water and set aside. Blanching shrimp tails can remove impurities and odors, making them cleaner and more hygienic to eat.


4. Heat oil in a pot, add minced garlic and stir-fry over low heat, stir-fry the minced garlic to bring out the garlic fragrance.


5. Add the shrimp tails and stir-fry for 2-3 minutes to remove the excess water, which makes it easier to absorb the flavor.


6. Then add the hot pot base and stir-fry together, fry the base, pour in seafood soy sauce, cooking wine, then add chicken essence, a little water, boil, simmer for 1-2 minutes, then reduce the juice over high heat, stir-fry evenly with coriander, turn off the heat, and put it on a plate.
