When pumpkin is overflowing, teach you a new way to eat, which is better than the thick soup in a Western restaurant and does not cost much

【Pumpkin bisque and croutons】

Ingredients: 500 g pumpkin, 50 g onion, 200 ml milk, 260 ml of stock or water

Note: Generally speaking, onions are used in Western soups. The amount of water varies according to the strength you like to drink, and this is just a guideline.

Make:

First, let's make the croutons

This kind of croutons can be bought ready-made or made by yourself in two ways.

a. Pour less oil into a frying pan and heat the bread cubes, add salt, sugar, black pepper, etc. (you can also add other spices, as you like) to taste, and fry until brown.

b. You can also use the oven, cut the bread into cubes, add oil, salt, sugar, pepper, allspice, etc., and bake it in the oven at 180 degrees until it is crispy (stir it several times in the middle and heat it evenly).

2. Boil pumpkin soup

1. Remove the pumpkin and some bad pumpkin skin, cut into thin slices. Note: Pumpkin rind is edible.

2. Cut the onion into small cubes.

3. Pour less oil into the pot, about 10 grams, after heating, first fry the diced onion to change color, fry until fragrant, and then fry the pumpkin.

4. Stir-fry until the pumpkin changes color and softness, add water or stock (about 260ml) over the pumpkin, cover the pot, keep it on a low boil after boiling, and continue to cook until the pumpkin is fully cooked, about 5 minutes.

5. Pour into a blender and puree.

6. Pour the pumpkin puree back into the cooking pot, add about 200ml of milk, stirring while adding to adjust the thickness.

7. After the pumpkin soup is boiling, keep it to a low boil, continue to cook for another 3-5 minutes, add salt and white pepper to taste, and the soup is complete.

8. Western soup is usually served with croutons, or bread.

You can also garnish the soup with parsley, or cream, or if you don't have it.

Small Whispers:

1. The thickness of the pumpkin soup is adjusted to your liking, so the amount in the recipe is just a reference.

2. Pumpkin can also be steamed, but stir-frying, the taste will be more fragrant.

3. Crouton: It is often used in Western food to accompany salads and soups.

4. The same method can be used to make all kinds of other thick soups
