Here's how I made it:

1. Peel and slice the sweet potatoes and steam them in a pot.

2. Put a few slices of sweet potatoes in a food processor, beat in 2 eggs, add a little water, and beat into juice.

Add 30g of sugar, 4g of yeast, 1g of salt to 3,400g of flour, add 280ml of sweet potato juice in small amounts, add 30g of cooking oil, and knead into a soft dough.

4. Put it on the silicone mat and rub it back and forth like rubbing clothes.

5. The whole process takes about ten minutes, and a thin film is fine.

6. Tidy it up, put it in a bowl, cover it and let it rise.

7. Stir-fry the jujube paste stuffing in advance, take an appropriate amount and knead it into a ball for later use.

8. Wake up the dough, press a few times to exhaust, and divide it evenly.

9. Arrange each piece of small dough and reunite. Cover with plastic wrap and let loose for 10 minutes.

10. After relaxing, roll out each piece of small dough into a round cake and put in the jujube paste filling for him to close.


11. Put it in the steamer after it is done, cover it with a lid and let it rise until the volume expands significantly.

12. Turn on the high heat and steam for 20 minutes, turn off the heat and simmer for another 3 minutes.

The sweet potato and jujube paste buns are good, fluffy and soft, and the sweetness of the jujube paste, which is particularly delicious.
