Today, I will share a recipe for fried rice cakes, using rice cakes and Cantonese sausages to stir-fry a piece, full of cured meat, the rice cakes are soft and glutinous and smooth, tough but not sticky, fragrant but not greasy, and chewy.
How to make sausage fried rice cakes
Ingredients: 400 grams of rice cake slices, 150 grams of Cantonese sausage, 30 grams of rape.
Ingredients: 3 grams of garlic, 2 grams of millet pepper, 3 grams of hoisin sauce, 1 gram of oyster sauce, appropriate amount of oil, a little salt.
In the first step, rinse the sausage and cut it into thin slices, the sausage slices are thinner and easy to fry out the fat, the millet pepper is washed and cut into pieces, the garlic is minced, and the rape is washed and rooted, and sliced. If you choose Sichuan-style sausage, it has a spicy taste, and millet pepper can be left out.
The second step is to boil hot water in the pot, after boiling over high heat, put in the rice cake slices and boil them until the rice cake slices float up from the water.
The third step is to heat the oil over medium heat, fry the minced garlic and millet pepper until fragrant, pour in the sausage slices and stir-fry for 2 minutes to become cooked, there will be a lot of oil in the sausage, so the amount of cooking oil should be less to avoid frying greasy.
Step 4: Drain the rice cake slices, put them in a pot and stir well, add hoisin sauce and oyster sauce, turn to high heat and stir-fry for 2 to 3 minutes.
The fifth step is to add rape slices and stir-fry, if the saltiness is not enough, add a little salt to taste, stir-fry well, turn off the heat, remove from the pot and put it on a plate to eat.
Tips:
If it is a whole piece, it is best to slice it a little thinner, and if you cook it in advance, the fried taste will be softer and glutinous, but the cooking time can not be too long, otherwise the rice cake slices will be too soft, easy to become very sticky, and the taste of the fried is not good, there is no chewiness, and the rape inside can be freely matched according to your favorite vegetables.
