The method I share today is that you don't need to whip it, you don't need an oven, you can make it with a frying pan at home, the crust is crispy, and the inside is full of milky purple sweet potato puree!

Here's how I made it:

1. Beat five eggs into a bowl, about 300 grams with the shell, add 70 grams of sugar, and stir well until the sugar melts.

Add another 2 grams of salt, 90 ml of pure milk, 4 grams of aluminum-free baking powder, 20 grams of lighter cooking oil, stir well, and the color is consistent.

2. Add a small amount of 250 grams of low-gluten flour many times, and you can also use all-purpose flour, but it is made with low-gluten flour, which makes the taste more crispy.

Stir in a Z-shape to prevent the flour from glutening and not being crispy and fluffy enough. Stir into a fine, particle-free paste and you're done.

3. Cover with plastic wrap and let rise for 30 minutes.

4. After waking up, the surface is full of bubbles.

5. Stir well in a zigzag shape.

6. Heat the pan until slightly hot, pour in half a spoon of batter, fry on low heat for about 1 minute, the surface is full of bubbles, set and solidify and then turn over.


7. Turn over and fry for about 10 seconds.

8. When frying the next cake, be sure to let the pan cool, or rinse it down with cold water to let the pan cool down. The color of the cake fried in this way is relatively consistent, and it is not easy to fry.

9, Today I made purple sweet potato filling, and at the same time as the pancakes, we can make the filling well.

Steamed purple potato, add an appropriate amount of sugar, and mash it while hot. Add an appropriate amount of milk and mix into a viscous purple potato filling.

10. Spread the mixed purple potato filling on the light-colored side of the cake, press a piece of cake, and knead it firmly.


The outer skin is crispy and fluffy, and the inside is honeycomb structure, full of milky flavor!
