Fried oyster yellow is a traditional famous dish with full color and flavor, which belongs to the Shandong cuisine Jiaodong cuisine. This dish is very delicious and popular in Jiaodong, and is often used as the first course of a festive feast.
Do you need to blanch oysters to make fried oysters? I think blanched oysters will blanch some of the umami on their bodies, so I don't blanch fried oysters. However, the oysters that have been blanched and then fried have a texture and are more attractive. In fact, both methods can be used, depending on personal preferences, today I will share my method of fried oyster yellow, let's take a look!
raw material
250 grams of oysters, 1 egg, 50 grams of starch, appropriate amount of chopped green onions.
seasoning
3 grams of salt, pepper and cooking oil.
method
Step 1: Pour the oysters into a larger bowl, pour in a small spoonful of flour and gently scratch and wash them, wash off the black film and mucus on the surface of the oysters, then rinse them with running water, wash them and drain them with a colander after washing. Flour has an adsorption effect, which can absorb the dirt on the surface of the oyster, so that it can be cleaned cleanly.
Step 2: Drain and pour into a bowl, add 3 grams of salt, appropriate amount of pepper, gently stir well with chopsticks and marinate for another 3 minutes to make it taste.
Step 3: Beat an egg into the bowl, beat it fully with chopsticks, pour in 50 grams of starch, and stir it evenly with chopsticks in one direction.
Step 4: Stir it until it is thick yogurt-like without particles, then pour in 10g of cooking oil and stir well.
Step 5: Then pour the marinated oysters into the starch paste and stir well with your hands in one direction.
Step 6: Stir like this.
Step 7: Heat the pot and pour in a little more oil, put it in with chopsticks and immediately bubble when you can put in the oysters to fry, put them one by one by hand, fry them slowly over medium-low heat, and fry them all until they are set, and gently turn them with chopsticks to prevent them from sticking together.
Step 8: Fry it until it is slightly yellow, then remove and drain the oil.
Step 9: When the oil temperature rises again, pour in the oysters and fry them for 30 seconds, fry them until the appearance is golden and crispy, then remove the drained oil and put it on a plate, and then sprinkle with an appropriate amount of chopped green onions and salt and pepper powder to enjoy the food.
Tips:
1. The oysters should be relatively large, so that they can taste meaty, and the washed oysters must be fully drained so that they can hang the batter.
2. Fried oyster yellow is added with flour or starch, in fact, both can be used, it will be more crispy when fried with flour, or you can add half flour and half starch to fry.
