Ingredients: 2 pork bone sticks, appropriate amount of beans, a little carrot, spice packet (1 star anise, about 20 Sichuan peppercorns, 2 small pieces of tangerine peel, 2 bay leaves, 1 grass fruit), 4 shallots, appropriate amount of ginger, a little white vinegar, 2 tablespoons of Yipin fresh soy sauce, an appropriate amount of salt, 2 tablespoons of cooking wine, a little Sichuan pepper powder, and a little sugar
1. First of all, prepare the required ingredients, the pork bone stick has been asked to help the store to cut it into small pieces when purchasing, soak it in water for about 20 minutes after washing, and change the water several times halfway; I use our local white kidney beans, and other varieties of beans can also be used; Spice packets must be prepared; Then prepare the green onions, ginger and other seasonings
2. Add an appropriate amount of water to the pot, put the pork bone sticks in a pot under cold water, then add green onions, ginger slices and 2 tablespoons of cooking wine to start blanching, during which the foam in the water should be skimmed out, and blanch for about 2~4 minutes
3. Wash the pork bone stick with warm water after removing it for later use
4. Start another pot, add an appropriate amount of water to the pot, put in the washed pork bone stick after the water becomes warm, then add green onions, ginger slices and spice packets, then add a little white vinegar, turn to low heat and simmer slowly. I am generally used to cooking meat or pork ribs in a cast iron pot, about 2~3 hours of simmering time, you can also use a pressure cooker, of course, the time should be appropriately reduced
5. The pork bone stick is stewed until it can be easily inserted into the meat with chopsticks and then the heat can be turned off
6. After the pork bone stick is stewed, start to process the beans, add an appropriate amount of oil to the pot, and then add shredded ginger and green onion to stir-fry to make the fragrance
7. Wash the beans after removing the tendons, then break them into small pieces and put them in the pot, by the way, cut the carrots into wide strips and put them in the pot, stir-fry until the beans all change color to break, and the beans will be fried for a while to stew the dish with a good taste
8. Add a fresh soy sauce and stir-fry to bring out the fragrance, remember to fry over low heat
9. Then add the hot water that has not passed the beans, then season, add an appropriate amount of salt, a little sugar, a little pepper and stir-fry evenly, because I did not add salt when I cooked the pork bone stick, so the amount of salt in this step should bring out the amount of pork bone stick
10. Simmer the beans until 8 mature, then put in the pork bone stick, turn to medium heat and simmer until the beans are fully cooked, and collect the soup on high heat

Tips:
1. The taste of pork bone sticks simmered in a cast iron pot over low heat is better than that made in a pressure cooker, and the disadvantage is that it will take longer.
