Yam and flour do this, 1 time to make 3 kinds of food, nutritious and delicious on the table, really fragrant




Today, I will share the use of yams, flour, eggs, black sesame seeds and yeast, and make a dough to make 3 nutritious and delicious snacks. They are golden in color, crispy and delicious, and are particularly simple to make.  

 【Yam sesame rings, yam sesame cakes, yam sesame bubbles】

1. The ingredients are: 300 grams of all-purpose flour, 150 grams of yams, 3 grams of yeast, 4 grams of salt, 2 grams of sugar, 100 grams of warm water, and 2 eggs.

2. [Handling yams] Pour water into the pot, bring to a boil over high heat, put in the yams, blanch for about 30 seconds, take them out, take a shower, and scrape off the skin of the yams with a skin scraper. (After scalding with boiling water, the yam is not sticky at all when scraping the skin, and it is particularly easy to handle).

Peel the yam, rinse it and cut it into thin slices of uniform thickness. Pour water into the steamer, put the yam into the cage drawer, steam on high heat for 8 minutes, and simmer for 3 minutes.

Remove the steamed yam while it is hot and press it into a particle-free and delicate puree with a rolling pin or spoon.

2. [Stir-fry black sesame seeds] Put the prepared black sesame seeds into a frying pan, turn on low heat, fry the sesame seeds until fragrant, about 3-5 minutes, pour out and set aside.

3. [Noodles] Put the weighed yeast in warm water, stir it, and ferment for 3 minutes.

Next, put the flour, sugar, salt, eggs, and mashed yam into the pot.

Use chopsticks to slowly stir all the ingredients into a flocculent shape and let all the ingredients mix evenly.

Then pour in the yeast water and stir into a ball with chopsticks.

Then add the fried black sesame seeds, an appropriate amount of cooking oil, continue to stir the dough with chopsticks, and relax for 5 minutes.

After the dough has relaxed to a certain amount of time, then knead it into a smooth dough and let it rest for 30 minutes. (This dough is a soft dough, just after stirring, it is not easy to knead, relax for 5-10 minutes, let the dough gluten, so that it is easy to knead the dough smooth).

4. [Make into embryo] After the dough rises to the time, it will be twice the size of the original dough, and pour an appropriate amount of cooking oil into the dough.

Then move the dough dough to the cutting board, do not knead, slightly round and exhaust, roll it into a large rectangular thin sheet, about 1 cm thick.

Use a round glass or a round mold to press out a small round cake base on the dough.

Gently pick up the excess noodles, knead them, and then continue to roll them out and press them into cakes.

Then use a small mold or a small glass wine cup to press out a small pie crust from the middle of a part of the dough, so that our yam sesame rings, yam sesame cakes and yam sesame small bubbles are ready.

Step 5: [Control the oil temperature and fry the finished product] Pour wide oil into the pot, heat it for 6 minutes, put in the yam and sesame rings, fry and float up, and the oil can be removed from the golden brown on both sides.

The oil temperature is still controlled at 60% hot, respectively, into the yam sesame bubbles and yam sesame cake embryos, they will immediately swell and round, float out of the oil surface, and then turn over, fry golden brown to remove the oil.

In this way, our surface is golden, crispy and delicious, and the nutritious yam sesame rings, yam sesame cakes and yam sesame bubbles are fried, and three delicious delicacies can be deducted with a simple mold.

Tips:

1. The ratio of flour and yam in the dough is 2:1, which is conducive to the proofing and making of the dough.

2. This dough is relatively soft, after stirring, let the dough rise for 5-10 minutes, add an appropriate amount of cooking oil to knead, it is not sticky and easy to knead smooth.

3. The proofed dough does not need to be kneaded, slightly vented and rounded, you can make a shape, and then fry it, no need to wake up again.
