I remember when I was a child, whenever there was a grand festival, the people in my hometown would make crispy dumplings. Crispy dumplings are both beautiful and crispy. Here's how I do it:
Add a small amount of 130ml of cold water to 1,300 grams of flour, stir into a dough, add 50 ml of cooking oil, and knead into a smooth dough with moderate firmness and softness. Cover and let rise for 30 minutes.
2. In the past, when I ate crispy dumplings, they were generally filled with sesame brown sugar, or fried with peanuts, but today I added some walnuts to it.
3. Fry the sesame walnuts, put them in a plastic bag after cooling, and roll them out with a rolling pin.
4. Put it on a plate, add an appropriate amount of white sugar or brown sugar, the amount of sugar is determined according to personal taste, and if you like to eat sweet, you can put more sugar.
5. Wake up the dough, knead it for a while, and roll it into a large pancake, which is slightly thicker than the dumpling skin.
6. With the help of a round mold, I use a cup here to press out the dumpling wrapper. Don't throw away the extra corners, knead them together, like the previous operation, and continue to roll them into dumpling wrappers.
7. Add the sesame walnut filling, fold it in half, and knead it firmly on both sides. Then use your thumb, index and middle fingers to pinch out the lace.
8. The oil is burned until it is hot, that is, the chopsticks are inserted into the oil, there are small bubbles around the chopsticks, then turn down the heat, put in the dumplings, fry them slowly over low heat, and turn them over many times halfway to make them evenly heated and the color of the fried ones is uniform.
9. Fry until golden brown on both sides, and you can remove the oil.
Sweet and crispy, with a strong sesame fragrance, it's really delicious! I remember that on our side, it is usually who organizes the happy event, and the dim sum before the main meal is crispy dumplings and oil cakes! It's rare to do it at home, so if you like it, you can try it!
