If you want carob dumplings to be delicious, there are 2 key points, the first point is that the beans must be blanched or fried first, because the beans are used as fillings, only boiled or steamed, it is very likely that they will not be cooked, the beans are not fully cooked, and people may get food poisoning after eating, resulting in nausea, vomiting, diarrhea and other adverse reactions;


The second key point is because you want to put a little more filling, it is recommended to use the steaming method, steamed dumplings can put more fillings, and it is more satisfying to eat.


【Raw materials】flour, beans, pork, eggs, salt, edible oil, light soy sauce, dark soy sauce, cooking wine, oyster sauce, sugar, sesame oil;

【Preparation of bean dumplings】

1. The dough will be better to operate after a period of time, so it is generally necessary to knead the dough first, slowly add 250g of water to 500g of flour, stir while pouring, stir into a dough flocculent, knead it into a dough, it doesn't matter if the dough is not smooth at the beginning, put it aside for 10 minutes, and then knead, the dough will soon be kneaded smooth, and after the dough is kneaded, put it aside for 40 minutes;


2. After the dough is kneaded, you can process the beans, prepare the beans according to the number of people in the family, remove the two ends of the beans, clean them, and soak them in salt water for 10 minutes;



3. After the beans are soaked, you can blanch them first, boil the water in the pot, add salt and cooking oil, which can ensure the emerald green color of the beans, put the cleaned beans into the pot, blanch for about 3 minutes, the beans are not fully cooked and eaten, easy to get food poisoning, be sure to blanch them first;


4. After blanching the beans, take them out and put them in cold water to cool, so that the color will be more emerald green;


5. When the beans are too cold, prepare broken eggs, beat 2 eggs in a bowl, add a little salt, cooking wine, and water, beat the egg liquid, heat the pot, add an appropriate amount of cooking oil, pour the beaten egg liquid into the pot, quickly break it up with chopsticks, fry it into broken eggs, turn off the heat and remove from the pot;


6. Cut the prepared pork into dices or minced meat according to your preference, add a little green onion, ginger and garlic water to the cut meat filling, stir well, and then start seasoning, add salt, cooking wine, light soy sauce, dark soy sauce, oyster sauce, sugar, stir well, and the meat filling is ready;


7. Chop the cold beans, squeeze out the water after chopping, and put them in a large bowl for later use;



8. Put the prepared beans, egg crushed, and meat filling in the same large basin, the eggs and meat filling are already salty, and you don't need to add salt to the beans, add a little sesame oil or cooking oil, stir evenly, and the filling will be adjusted;



9. Roll the dough into long strips and cut it into dough, what I make is steamed dumplings, the dough can be appropriately larger, take a dough, flatten it and roll it into a thin dough;


10. Take a rolled dough, put the prepared filling, fold it in half, and knead it into the shape of your favorite dumpling;


11. After everything is done, you can steam it in the pot, steam it in a pot on cold water, steam it for another 12 minutes when the water is boiled, turn off the heat and simmer for 3 minutes before taking it out of the pot;
