Marinade: 1 lemon, 4 cloves of garlic, 3 peppers, 3 dried chili peppers (millet peppers), 2 chives, 3 tsp light soy sauce, 1 tsp oyster sauce, 3 tsp fruit vinegar, 1 tsp sugar, 2 tsp chili oil, a pinch of monosodium glutamate
Step 1: Soak the chicken feet in water for 30 minutes, and then cut off the nails one by one.
Step 2: Cut off the chicken feet in a pot under cold water, add a handful of peppercorns, green onions, ginger slices, and cooking wine to remove the smell, skim off the foam and cook over low heat for 10 minutes after the water boils. After boiling chicken feet, you must change to low heat to boil, high heat will open the skin of the chicken feet and open the meat, and it is not easy to operate when the bones are removed.
Step 3: After removing the chicken feet, rinse them with running water, put them in ice water, and put them in the refrigerator for 60 minutes.
