【How to do it】
Step 1: Prepare the side dishes first. This time, I put leeks, and the leeks and eggs changed into tricks to do this, and it felt good to take a bite. I like to eat it with a spicy sauce.
Step 2: Crack 5 eggs in a bowl.
The ratio of eggs to leeks is done by yourself, as long as the eggs can "hold" the leeks and do not fall apart when frying.
After that, add a little salt, pepper powder, stir well and set aside.
Step 3: After adding salt and a little peppercorn powder to the eggs and stirring well, put in the leeks that have been washed and chopped in advance, and stir well.
When cutting leeks, it is best not to be too long, and to change them to other vegetables, but also chop them a little.
Step 4: Start frying.
1. Smear a layer of oil on the bottom of the pan to prevent sticking, and at the same time smear the oil to fry the eggs more fragrant.
Don't pour it all in, the bottom of this pot is huge, so let's pour in 1/3 of the amount first.
Pick up the handle of the pot and shake it slightly, and the egg will be spread into a pancake. Be careful not to let the leeks pile together, so, stir the mixture a little before pouring it into the pan.
When it solidifies, we gently roll it up with the help of a wooden spatula. Don't take the pan out of the pan and leave the rolled egg rolls on one side of the pan.
2. Then, pour in 1/3 of the mixture, and spread out a pancake according to the same method as at the beginning.
The end near the roll can connect them, which is very simple.
After that, wait for it to solidify.
By the way, in the process of frying, use low heat throughout the whole process. After all, it's just such a thin cake, and it's easy to fry black when the fire is big.
3. After the egg cake made for the second time is solidified, roll it up, wrap the first time in this layer and roll it, and then pour the last remaining 1/3 into it.
After all the eggs are done, roll them up after frying.
The whole process was poured three times, each time it was 1/3 of the amount, and if it was not easy to grasp, use a spoon to get it.
Finally, it is thoroughly rolled up and finished.

Step 5: Remove from the pan and cut into rings.

Step 6: Plate the finished product to display.

Tips
First, when frying, the whole process is on low heat, otherwise it will not be so beautiful if it is burnt.

Third, if you want to fry so thinly, don't be lazy and roll it a few more times. If you want to roll it thicker, it's also good to divide it a little less.
