1. Put the cucumber peel in a basin with an appropriate amount of water and baking soda, soak for 5 minutes, so that the residual pesticides can be better removed, and then cleaned.


2. Put the cucumber peel into a food processor and add an appropriate amount of water to make the juice.


Add a spoonful of salt to 3,300 grams of flour, stir well, add 140 ml of cucumber juice in small amounts and several times, stir until there is no dry flour, and knead into a slightly firmer dough. Cover and let rise for 30 minutes.


4. Shred the cucumber.


5. Add an appropriate amount of salt, stir well, and marinate the excess water.


6. Add an appropriate amount of water to the pickled cucumber shreds, wash off the excess salt, and then dry the water.


7. Chop the cucumbers.


8. Add chopped cucumber to the stirred meat filling, add an appropriate amount of minced ginger, chopped green onion, salt, light soy sauce, dark soy sauce, chicken essence, sesame oil, and then beat an egg and stir well.



9. Roll out the awakened dough into a large dough sheet, and try to roll it out as thin as possible, about the thickness of the dumpling skin. It can also be rolled into the thickness of the wonton skin, and it is also good to make it into wontons and eat.


10. Divide it into long strips with the help of a rolling pin and cut it into cubes.



11. Add the filling and wrap it to your liking.




12. Add 1 tablespoon of salt to the water to prevent the dumpling skin from boiling, put in the dumplings after the water boils, boil again and push a few times to prevent the pan from sticking, and turn down the heat to cook the dumplings.


13. Add an appropriate amount of salt, light soy sauce, balsamic vinegar, sesame oil, sugar, seaweed, chopped green onion to the bowl, and scoop a few spoonfuls of dumpling soup.


14. After the dumplings are cooked, put them in a bowl, add some coriander and start eating.
