The simplest small flower rolls

Dough: 300 grams of plain flour, 3 grams of yeast, 160 grams of water.

Here's how

Put 300 grams of plain flour in a basin, add 3 grams of yeast, pour 160 grams of water, and stir with chopsticks to make a large dough without dry flour. If you want the flower roll to ferment quickly, use warm water and noodles, if the action is slow, you are afraid that the flower roll will start to ferment before it is done, then use room temperature water. In fact, it is the hottest season of midsummer, and it is quite fast to ferment with room temperature water.

A friend asked me in a private message why I always like to use 300 grams of flour to make pasta, why not use 200 grams or 400 grams, here by the way, I will tell you that a family of three uses 300 grams of flour to make pasta at a time, which is almost just enough to eat in one meal, even if there is leftover, it will not be too much. 200 grams is too little, 400 grams is too much. Of course, sometimes 400 grams or even 500 grams will be used when guests come to the house, and there are times when a person is not at home for dinner, and 200 grams will be used.

Knead the smooth dough with moderate hardness and softness, so that there are three lights: face light, pot light, hand light, the surface of the dough is smooth and delicate, which means that the dough is kneaded in place, and the flower rolls made are beautiful and delicious.

Place the dough on a cutting board and roll out a large rectangular sheet with a rolling pin, the thinner the rollout, the more layers it will roll up. Then evenly brush with a layer of cooking oil, sprinkle with a layer of dry flour to prevent the flow of smooth dough sheets, which is equivalent to a simple version of puff pastry, and then sprinkle a little edible salt, and the flower rolls made with a hint of saltiness are more delicious.

Stand up the trapezoidal dough block with the narrow side (top bottom) facing up and the wide side (bottom bottom) facing down, and place it horizontally in the middle of the top bottom with chopsticks.

After everything is done, it is directly placed on the steamer drawer to start fermentation, put water in the steamer in advance, spread an anti-stick pad on the steamer, or directly brush a thin layer of oil on the steamer until the anti-stick effect.

After about 20-30 minutes, the flower roll expands visibly, and because the inside of the fermentation is full of gas, it is light to pick up. Turn on high heat to bring the water to a boil, steam over medium heat for 15 minutes, turn off the heat and simmer for 3 minutes, then quickly open the lid and take it out.
