[Ingredients]: 450 grams of flour, 250ml of water, a little white wine, half an onion, 10 grams of shallots, 12 grams of garlic, 3 tablespoons of Pixian bean paste, 10 grams of ginger, 1 handful of Sichuan pepper, 6 grams of cumin, appropriate amount of white sesame seeds

【Method】:

1. Prepare the flour first, pour in an appropriate amount of water, and form a smooth dough after 15 minutes and knead it again

2. Finely chop the onion, ginger, garlic, chili pepper and green onion into the mixing bucket of the blender

3. Add bean paste and a little white wine

4. After beating all the ingredients into juice, put them in a frying pan and boil over low heat for 5 minutes

5. Put Sichuan pepper and cumin powder in a bowl, pour in the hot oil, and let out the fragrance

6. Divide the dough into several small portions, then roll it into a thin cake, about the size of a pan of pancakes, and coat it with cumin pepper oil

7. Roll up the oiled noodles

8. Roll it into a ball again,

9. Flatten and roll out into a thin large dough cake

10. Preheat the electric baking pan or frying pan and brush with oil, put in the rolled thin dough cake and turn to low heat and fry slowly

11. Turn over one side and fry the other side, and brush one side with the sauce

12. Sprinkle with chopped green onions and white sesame seeds, turn off the heat, slice and enjoy

Tips: If you like spicy food, you can add some red peppers to the sauce and break them up and boil  them together
