The whole production process of Xi'an mutton steamed bun is divided into five processes: boiling meat, scooping meat, making steamed buns, breaking steamed buns, and boiling steamed buns.  Let's take a look at the specific method of family stewed mutton soup.

Ingredients: 700 grams of lamb, 700 grams of lamb bones, 3 grams of cumin, 3 grams of Sichuan peppercorns, 80 grams of green onions, 20 grams of ginger and 3 liters of water

Make:

1. First of all, soak the mutton and mutton bones one night in advance, soak in bloody water, and change the water several times in the middle.

2. Put the meat and bones soaked in blood water and boil them for 2-3 minutes, boil the blood, then pour out the water and clean the meat and bones. If the blood is soaked relatively clean, and there is not much blood, only the foam can be removed.

3. Put the meat and bones back in the pot and replace with fresh water, about 3 liters.

Bring to a boil over high heat, skim off the foam, and place the prepared spices in a saucepan.

4. Use a pressure cooker to save time and energy, wait until the pressure cooker is gasped, change the heat, and keep the gas on for 30 minutes (if it is an ordinary pot, at least 2 hours).

After decompression, if the lamb can be gently passed through with chopsticks, remove the meat and set aside.

5. The bones are still in the pot, cover the pot tightly, boil on high heat, change to low heat, keep the state of gasping and cook for another 30 minutes, so that the bones are all crispy, and the mutton soup is cooked.

Or boil the bones under pressure for 30 minutes, then put the meat on for 25 minutes.

Eating steamed buns is particularly particular. When eating, it needs to be accompanied by sugar garlic, spicy sauce, coriander and garlic sprouts, dig some chili sauce and put it on the top of the bowl, sprinkle some green garlic sprouts and coriander, do not stir, eat from the side, called cannibalization, say that it is a stirring fragrance to emit it, if you feel greasy, take a bite of sugar garlic.
