In winter, when the weather is cold, how can you just eat stir-fried vegetables for lunch? A bowl of hot vegetable soup is both warm and nutritious.

Ingredients: 150 grams of soft tofu, 100 grams of small green vegetables, 1 egg, 4 grams of salt, 10 grams of starch, 1 coriander, a small handful of shrimp skin, and a little chopped green onion

Directions:

1. After preparing all the ingredients, beat the tofu into small squares of 1 cm size for later use, if you are afraid of the smell of beans, you can blanch them in a pot of boiling water.

2. Chop the washed small greens, the leaves and the vegetables should be separated, and it is recommended to chop some of the vegetables better. Don't choose a big green cabbage when buying small greens, chicken hair cabbage and small cabbage that is only ten days old are more suitable.

3. Heat the pot, pour in a little oil, and then add the vegetables and stir-fry for 1 minute, stir-fry until soft. The chili peppers are put according to our family's taste, and you can omit the chili peppers.

4. Then pour in 2 large bowls of boiling water and boil, it is recommended to let go of the water, which can shorten the cooking time of the soup and will not let the cabbage lose nutrients.

5. After boiling, add tofu, vegetable leaves, salt, and pour in starch water to thicken.

Starch water mixing: 2 teaspoons of starch, add half a bowl of cold water and mix thoroughly, pay attention to the cold water.

6. After boiling, sprinkle in the egg liquid, and finally add a little vinegar, sesame oil, and shrimp skin, then turn off the heat and drink. Vinegar and sesame oil can also be left out according to your preference.
