Ingredients Required:

White fungus, carrots, peanuts, coriander, garlic, dried chilies, salt, light soy sauce, oyster sauce, rice vinegar, sugar, chicken essence, sesame oil, Sichuan pepper oil

1. Put a little salt, a little baking soda, and an appropriate amount of water in the basin, stir well, and soak in the white fungus.

2. Put oil in the pot, put the peppercorns into the oil and fry the fragrance, remove and use.

Then pour the boiled pepper oil over the chopped garlic and dried chili peppers while hot to bring out the fragrance.

Then add salt, light soy sauce, rice vinegar, oyster sauce, sugar, chicken essence and sesame oil according to personal taste and stir well.

3. Tear the soaked white fungus into small flowers and clean it (don't want the yellow white fungus pedicle).

Add the shredded carrots.

4. Put water in another pot, add a little salt and cooking oil, blanch the processed white fungus and carrot shreds for one minute after the water boils, and remove it to cool (it is best to use cool boiled water).
