【Pumpkin Hair Cake】
Ingredients: 250 grams of raw pumpkin (after removing seeds), 300 grams of plain flour (also called all-purpose flour), 2 eggs, 3 grams of yeast, and an appropriate amount of red dates

Production process:
1. First of all, let's deal with the pumpkin, cut the pumpkin prepared in advance into slices after removing the skin and seeds, put it in a steamer with cold water in advance and start steaming, and steam it for about 15 to 20 minutes on high heat, as shown in the figure.
2. The specific steaming time is operated flexibly according to the pumpkin situation, and the steaming is pricked with chopsticks, which is easy to pierce and rot, as shown in the figure.
3. After the pumpkin is steamed, prepare all the other required ingredients, which is more convenient to use in the operation, as shown in the figure.
4. Crush the steamed pumpkin with a spoon or puree it directly from a food processor, I use a food processor to beat it, it will be more delicate, this everyone can operate at will, as shown in the figure.
5. First beat 2 eggs and stir evenly, put in 3 grams of yeast, and then put the pumpkin puree we have processed above, stir evenly, put in flour, continue to stir with chopsticks in one direction, stir it into dry flour, the whole state is a very smooth thick batter state, as shown in the figure.
6. Cover the lid or plastic wrap to ferment at room temperature, as shown in the figure.
7. Ferment it to about twice the size of the original, and some honeycomb appears on its surface, then the fermentation is ready, as shown in the figure.
8. Stir it with chopsticks or other tools to discharge the gas generated during fermentation, as shown in the figure.
9. The thick batter after stirring has discharged all the gases generated during fermentation, as shown in the figure.
10. Pour the pumpkin thick batter into the mold prepared in advance, I use an eight-inch square mold, lay the oil paper in advance, in order to facilitate the demoulding and cleaning of the mold, smooth the pumpkin thick batter poured into the mold, and then put in the red dates and place it, as shown in the figure.
11. Put the above-mentioned rain and wind blowing melon batter into the steamer and start steaming, the pot can be steamed on cold water, the whole process is turned on the high fire for steaming for about 25 minutes, and finally turn off the fire and simmer for four or five minutes before opening the lid, shake the mold while it is hot, and then take it out of the mold, so that the soft and sweet pumpkin cake is made, as shown in the figure.
12. Cut into pieces and serve on the table to eat, hot is the best, of course, it is not hard when it is cold, but I still like the hot taste.
