Today I will share with you how to make salt-baked peanuts at home, this delicacy does not need to be fried, it is all fried with salt, which is healthier than fried peanuts. Moreover, the peanut rice made has a crispy and crispy taste, delicious and not greasy.
1. Soak a seasoning water first, prepare a basin, add a small handful of peppercorns to the pot, add 2 star anise (crush the star anise by hand, so that it is easier to taste), then put some cinnamon and bay leaves, and then add some dried chili peppers according to your own taste. Then add boiling water to the basin and soak, mainly to use boiling water to stimulate the fragrance of these materials, which is a very important step.
When the fragrance of these spices is soaked out, and the water in the basin turns into lukewarm water, then all the spices in it are removed from the water and set aside. Then pour the peanuts prepared in advance into the pot and soak for 10 minutes, so that the peanuts can fully absorb the seasoning water, which will be more flavorful. If you soak for too long, the skin will easily break when the peanuts are fried.
After soaking the peanuts for 10 minutes, they will expand slightly and become larger, then take out the peanuts and pour them on top of the breathable tool to dry the water. Remember to dry the peanuts here, and if you are in a hurry, you can use a hair dryer to dry the peanuts. Wait until the water of the peanuts is dried before preparing for stir-frying.
2. Don't pour oil into the pot, pour 2 bags of salt directly into the pot. Then turn on low heat and stir-fry, after all the salt in the pot is hot, then pour the dried peanuts into it.
Continue to stir-fry over low heat, do not fry peanuts in a pot with cold salt here, otherwise the peanuts will be easy to peel off if they are turned for too long. And peanuts must be dried for water, the surface of peanuts has less moisture, it absorbs less salt, and the peanuts will not be salty. This method is mainly to use the temperature of salt to blanch the peanuts, at the beginning you can turn more turning, and you don't need to turn it frequently after frying. Because when the peanuts are about to mature, the peanut skin is easy to fall off, and the peanuts made by the time are not beautiful.
Fry the peanuts until they are eight ripe, and then pour the spices that have just been soaked in seasoning water into the pot and continue to fry. The fragrance of these spices is completely released, and the peanut flavor will be more intense. Stir-fry until there is a crackling sound of peanuts cracking in the pan, and then use a large colander to remove the peanuts. Here the peanuts are fried with salt for about 20 minutes. Don't pour out the remaining salt in the pot, you can still use it next time you fry peanuts, and the effect will be better and the taste will be more fragrant.
After the peanuts are cooled, the taste will be more crispy and delicious, and it will be more fragrant and delicious to eat
