Ingredients: two eggs, sugar, flour, cornstarch
Method: 1. Take a waterless and oil-free bowl, beat two fresh eggs, take out the egg yolk, and put it in another bowl.
2. Squeeze a few drops of lemon juice into the egg white to remove the smell, no lemon juice can add white vinegar, white vinegar can not only remove the smell, but also speed up the beating of egg whites.
3. Beat the egg whites with an electric whisk, and add 30 grams of sugar in three parts. First turn on medium speed and beat until the egg white is foamy, add sugar for the first time, continue to whip, beat to the level of milk, add sugar for the second time, beat until the consistency of old yogurt, add sugar for the third time, until the whisk has an upright angle, the whole process is about three minutes.
4. Add the egg yolk to the whipped egg white, beat a few more times, beat well, don't beat for too long.
5. Add 50 grams of low-gluten flour to it, if there is no low-gluten flour, replace it with 30 grams of ordinary flour and 20 grams of cornstarch, it is best to sieve it, it is easier to mix well.
6. Stir with a small spatula to let the flour and meringue fully blend and there are no particles. Be sure to stir, not stir, otherwise the egg whites will defoam.
7. Pour the mixed egg white paste into a piping bag or fresh-keeping bag, cut a small hole at the bottom, and squeeze out your favorite shape on the electric baking pan, the size and shape are determined according to the baby's age and preferences. The electric baking pan does not need to be preheated, you can squeeze it all before turning on the fire, so that the biscuits will cook together.
8. After all are done, put two chopsticks on the electric baking pan to support it, do not cover the electric baking pan tightly, turn on the upper and lower fire and simmer for six minutes, it must be the minimum fire, after six minutes, the biscuits will become hard, turn off the lower plate fire, and bake it with the upper plate fire for four minutes, until the biscuits are not soft and cooked.
Put it on a plate, you can enjoy it, it is very crispy, it melts in your mouth, my sister-in-law brought my three-year-old niece to my house, I made some for her, the child liked it very much, my sister-in-law said that it was added with cream, in fact, there is no such melt-in-the-mouth taste when bought outside, and there are more additives, and it is much healthier to do at home.
The amount of white sugar is added according to personal preference, I like sweet, my sister-in-law and niece also love sweet, and the name is also called "sugar sugar", so it is a sweet taste, but white sugar must be added, and white sugar can wrap the bubbles of the meringue.
Notes:
1. It must be a waterless and oil-free bowl, otherwise the egg whites cannot be whipped.
2. When branding, you must turn on the minimum fire, if the fire power of the electric baking pan is very large, then spread a layer of oil paper on the electric baking pan, which can prevent staining and prevent the bottom from burning.
3. When branding, you must use chopsticks to support it, otherwise it will be soft, and too much fire and a tight lid will cause the biscuits to be made like muffins.
4. Because there are no additives, if the biscuits you make can't be eaten, you must pack them in a convenient bag, otherwise they will become soft the next day.
