Stir-fried fat beef with onions
Ingredients: Beef fat, onion, green pepper, red pepper, steamed fish soy sauce, dark soy sauce, oyster sauce, pepper, starch.
Method:
1. Cut the onion into cubes, the green pepper into cubes, and the red pepper into cubes.
2. Half a bowl of water, add three spoons of steamed fish soy sauce, half a spoon of dark soy sauce, half a spoon of oyster sauce, an appropriate amount of pepper, a small amount of starch, stir well and set aside.
3. Boil the pot and sit on the water, put the fat cow in the water after the water boils, scatter it with chopsticks, stir until the fat cow basically changes color and removes.
4. Heat the oil in the wok, put the onion when the oil is hot, add the green and red pepper pieces after the fragrance is stir-fried, and put the fat beef when the onion is translucent.
5. Add the sauce after stir-frying evenly, and stir-fry evenly.
Sweet and sour crispy shrimp
Ingredients: shrimp, cooking wine, sugar, salt, egg white, starch, flour, oil, vinegar, light soy sauce, tomato paste.
Method:
1. Add cooking wine, sugar and salt to the shrimp and marinate for 10 minutes.
2. Beat the egg whites, add starch and flour, add water to make a batter for later use.
3. Put the marinated shrimp into the batter and coat the batter.
4. Heat more oil in the pot, fry the shrimp in the pan until they are set.
5. When the shrimp is cold, fry it again, fry it slowly over low heat and remove the crispy skin.
6. Sugar, white vinegar, light soy sauce, starch, tomato paste, salt, add an appropriate amount of water and mix well to make a sauce.
7. Heat a little oil in a pot and pour the juice into the pot to bring to a boil.
8. Put the fried crispy shrimp in the pot, quickly stir evenly, hang the sauce, and turn off the heat.
Pineapple ribs
Ingredients: pork ribs, egg white, cucumber, red, yellow pepper, pineapple, tomato paste, garlic, green onion slices, sugar, vinegar, salt, rice wine, monosodium glutamate.
Method:
1. Cut the short ribs into medium pieces, add sugar, salt, monosodium glutamate, egg whites and cornstarch and marinate for 30 minutes.
2. Cut the pineapple into cubes, cucumber and red and yellow peppers.
3. Turn the ribs to medium heat and fry them for about five minutes (fried) in a pan over high heat, let them cool and cut into small pieces.
4. Turn the oil pan to high heat, and fry the pork ribs (crispy yellow skin) until golden brown and remove them for later use.
5. Stir-fry the garlic in a frying pan, add cucumbers, red and yellow pepper cubes and stir-fry for a while.
6. Add the pineapple and stir-fry quickly, add the sweet and sour juice and stir-fry well.
7. Return the fried pork ribs to the pot, stir-fry quickly over high heat, roll the rice wine to the side of the pot, and reduce the juice for two minutes.
8. Put another spoonful of oil and fry quickly, and put the dishes on the plate.
Stir-fried tofu with green peppers
Ingredients: Tofu, green pepper, red pepper, dried chili, ginger, garlic, light soy sauce, chicken essence, starch.
Method:
1. Chop ginger, garlic and dried chilies, cut green peppers and red peppers into cubes, dry and slice the tofu.
2. Heat oil in a hot pan, fry tofu on both sides until golden brown, and shovel it out for later use.
3. Put oil, ginger, garlic and dried chili peppers in a hot pan and stir-fry until fragrant.
4. Pour in the green peppers, stir-fry the red peppers until soft, pour in the fried tofu, add a little hot water and stir-fry.
5. Add salt, light soy sauce, chicken essence and stir-fry, then pour in starch to thicken, and reduce the juice over high heat.
Dry-fried beans
Ingredients: beans, pork, light soy sauce, chicken powder, Sichuan pepper, garlic, salt, cooking oil.
Method:
1. Wash the beans, cut them into small pieces of about 4cm, wash and mince the pork, and chop the garlic.
2. Put oil in the pot, put in the beans after the oil is hot, fry until the skin of the beans is slightly wrinkled, remove the dry oil and set aside.
3. Start another pot, put in a tablespoon of oil, add garlic, dried chili pepper and Sichuan pepper to stir-fry until fragrant, then add minced meat, stir-fry for a while, then put in the beans, turn on medium heat and stir-fry until the beans are soft, add light soy sauce, salt and chicken powder, stir-fry evenly to taste.
Braised pork
Ingredients: pork belly, radish, quail eggs, oil, salt, star anise, Sichuan peppercorns, bay leaves, dried chilies, garlic, ginger, dark soy sauce
Directions:
1. Pork belly with skin, quail eggs, and white radish for later use.
2. Peel the quail eggs after cooking and set aside.
3. Wash the white radish, cut it into large pieces, and cut the pork belly into large pieces, blanch it and set aside.
4. Heat the oil in a pan, add the meat pieces, fry until slightly yellow, add sugar, and fry until golden brown.
5. Add cooking wine and dark soy sauce and stir-fry evenly.
6. Add dried red pepper, ginger, star anise, bay leaves, Sichuan pepper, stir-fry until fragrant, and then add an appropriate amount of water.
7. After boiling for ten minutes, add radish and quail eggs.
8. Cook for more than ten minutes, the meat and radish are soft and rotten, reduce the juice on high heat and add an appropriate amount of salt.
