Spicy grilled eggplant
A home-cooked recipe for grilled eggplant with minced meat
Ingredients: 1 purple eggplant, 1 green and red pepper, a small amount of minced meat, and an appropriate amount of minced garlic.

Step 1: I prepared two eggplants, and later found that the eggplants were relatively large, so I used one eggplant. Wash and cut off the head and tail of the eggplant, cut it in half, and then use a knife to cut each half of the eggplant into small cuts, as shown in the picture below, so that it is easy to absorb the flavor.
Step 2: Wash and chop the green and red peppers into minced pieces and put them in a bowl, add the minced pork, minced garlic and ginger. Add light soy sauce, pepper, oyster sauce, dark soy sauce, cooking wine, salt and other seasonings, and use chopsticks to stir all the ingredients and seasonings well and set aside.

Step 3: Place the prepared minced meat on top of the eggplant, line the baking tray with tin foil, and lay the eggplant flat on top of the eggplant. If you don't have tin foil, you can also use oiled paper instead.
Step 4: Put the baking tray with the eggplant into the middle of the oven, close the oven door, turn on the upper and lower heat, 200°, and bake for 25 minutes.
Step 5: When the time is up, bring out the roasted eggplant and sprinkle with the pre-cut shallots to enhance the flavor. This is a fragrant home-cooked roasted eggplant.
Precautions
1. It is best to use dark purple fat long eggplant for roasted eggplant.
2. Friends who don't like to eat minced meat can use minced garlic and chili peppers instead.
3. The temperature of the oven will be different in each house, so you should observe it yourself and adjust the temperature and time of the oven according to the actual situation.
