Tofu, pork, shallots, ginger, Pixian bean paste, salt, sugar, light soy sauce, starch, cooking oil.

Step Method:

1. First of all, clean the tofu and cut it into pieces, and put it on a plate for later use.


2. Cut and wash the shallots and cut them into sections, and separate the green onion whites and green onion leaves.


3. Prepare a little minced meat, I chose pork belly.


4. Boil water in a pot, put a spoonful of salt in the water after boiling, and blanch the tofu for 1 minute, so as to remove the beany smell in the tofu.


5. Heat the oil, add the minced meat when the oil is hot, and fry until it completely changes color.


6. Add a spoonful of Pixian bean paste and stir-fry the red oil.


7. After stir-frying the red oil, add the green onion and stir-fry until fragrant.


8. Add an appropriate amount of salt, a spoonful of light soy sauce, a spoonful of oyster sauce, a spoonful of sugar, and stir-fry evenly.


9. Add tofu, stir-fry for 1 minute, add a small amount of water, cover the pot and simmer for 2 minutes.


10. After 2 minutes, open the lid of the pot and pour in the water starch, add the green onion leaves and stir-fry for 30 seconds.


Tips:

1. Put hot water on the tofu and put some salt to remove the beany smell.

2. You don't need to put too many condiments in fried tofu, it's just simple.

3. The shallots and green onion leaves are separated, and the green onion leaves are easy to cook, so put them when they are about to come out of the pot.
