Takefish is spicy and appetizing, and it is even better than what the restaurant makes!


Method:

1. Clean and cut the hairtail, add 1 tablespoon of salt and marinate for 20 minutes, put the marinated hairtail in the hot oil in the pot, fry the hairtail on low heat and put it golden on both sides for later use.

2⃣️ Fry the hairtail in a pot, then put 3 dried chilies, 1 small handful of peppercorns, 3 slices of ginger, garlic slices (3 cloves of garlic) and green onion segments (half a root) and stir-fry to make a fragrance, add 3 spoons of cooking wine, 2 spoons of vinegar, and 3 spoons of light soy sauce.


3. Add the fried hairtail, add 1 tablespoon of sugar to enhance freshness, add a small amount of water to boil, simmer for 10 minutes on low heat to let the hairtail fully absorb the flavor.

4. Add 1 seasoning spoon of chicken essence and stir-fry evenly before cooking, collect the thick soup and put it on a plate and sprinkle with coriander.
