Step 1: Since it is pasta, kneading dough is the key, generally about 350-400 grams of flour are needed for two servings, and the amount of flour is increased according to the number of personnel.


  • First add 400 grams of flour to the washbasin, then melt 5 grams of salt with about 150 ml of warm water.

  • First, gradually add the brine to the flour to make a uniform dough. The noodles should be harder, and the taste will be strong when cooked.

  • Then knead the dough into a smooth dough.

  • After kneading the dough, cover and let it stand for 10-15 minutes, then knead until the surface is smooth.

Step 2: Prepare side dishes while you are resting, and set the side dishes according to your preference.   • Peel the water chestnut (water chestnut), especially the roots and shoots.

  • Cut the skinned and washed horseshoe into small pieces for later use.

  • Tear the chicken thighs into thin strips and set aside.

  • Cook the chicken broth and set aside.

Step 3: Boil water in a pot, prepare clean scissors for the kitchen, and cut the dough into the pot one by one with scissors when the water is boiling. Be quicker and don't let the time interval between the two sides be too long. If you stick the scissors when cutting the face, you can cut a few times and dip the scissors in water, and then it will not stick.


Step 4: This type of noodles is not easy to cook, so cook for at least 4 minutes or more. After cooking, remove and set aside, ready for the next step.


Step 5: Leave a little noodle soup at the bottom of the pot, then pour in the chicken broth used to cook the chicken thighs in advance and bring to a boil, then add the water chestnuts and cook for another 4 minutes.


Step 6: Cook the water chestnut for 4-5 minutes before adding the shredded chicken, friends who don't like shredded chicken can choose other side dishes, such as tomatoes, ham, greens, etc.


Step 7: Put in the boiled scissor noodles, then add some salt and light soy sauce to taste, friends who like spicy food can have some chili oil, and after boiling, you can get out of the pot, and this fragrant scissor noodles is ready.



Tips

Be sure to remember to put salt when mixing noodles, otherwise it will be difficult for the noodles to absorb the flavor when cooking, and the noodles will be more chewy when adding salt.

After kneading, the dough should rest for about 10 minutes, so that the flour particles can fully absorb water, so that the texture of the dough will be more uniform.
