1. Put the cleaned pig's trotters into the pot, add enough water, and then cut the ginger slices, green onions, and a little cooking wine to remove the smell. After the fire boils, there will be a lot of foam on the surface slowly, skim off the foam with a spoon, and continue to cook for about 5 minutes, trying to boil out the blood in the pig's trotters. Boil pig's trotters in a pot under cold water, and as the temperature slowly rises, the blood water in the pig's trotters can be better boiled, and the pig's trotters will not have a fishy smell. Bring out the boiled pork trotters, put them in warm water, and wash them. Do not rinse with cold water, as this will shrink the trotters and the meat will become tighter.


2. In order to make the pig's trotters easier to cook and rot, we first use a pressure cooker to press the pig's trotters for half an hour. Cleaned trotters are placed directly in the pressure cooker. Cut a few more slices of ginger, 3 star anise, a few bay leaves, 2 cinnamon, 2 tablespoons of light soy sauce, a little dark soy sauce to color, 1 tablespoon of cooking wine to remove the smell, and finally add boiling water that has not covered all the ingredients, so that the pig's trotters will be softer and rotten. Cover the pressure cooker with a lid and continue to press for half an hour after steaming.


3. When the time is up, the trotters are pressed and the pressure cooker can be opened. We lifted the lid, first took out the spices inside with chopsticks, and then put the pig's trotters out one by one and put them in a large basin. After letting it cool slightly, pull out the bones of the trotters, leaving only the trotters. Stir up a pot and put the pork trotters into the pot, and then pour the soup from the pig's trotters into the pot. Turn on high heat and thicken the soup. In about half an hour, our soup has become thicker, and we can turn off the heat and remove from the pot.


4. Prepare a crisper with a lid, put the pork trotters in the crisper box together with the thick soup, wait until it cools a little, cover the lid, and put it in the refrigerator overnight. The next day, take it out of the refrigerator, open the lid, and gently pat it upside down to remove the pig's trotter jelly.
