First we prepare the ingredients

2 tablespoons (spoon) of maltose, 200ml of water, 250g of glutinous rice flour, 40g of white sugar or white sugar, 100ml of water

After stirring into a flocculent shape, knead the dough with your hands and press it, without kneading it vigorously like white noodles


After kneading, we flatten it and roll it out with a rolling pin to form a 0.8 cm dough cake


Then use a knife to cut the dough into small strips, you can cut large strips first, and then cut small strips, the length and width of the strips should not be too large, because the back will swell, don't ask me how to expand, because I also cut a bit big, and finally Jiangmi noodles are like a little fat man, the length is 3 cm, the width is 0.5 cm, and the cut strips can be rolled into columns with small hands, which will look better


In this way, the semi-finished product of the rice noodles is ready, we pour oil into the pot, and when the oil is hot, we put it into the rice noodles and start frying


When we fry it for the first time, the color is not obvious, and after the rice noodles float up, we can fish them out


Then remove the whole thing and then pour it into the oil and fry it a second time, this time it will be very dark in color


We can eat it like this, and if we like to eat more sweet, we can move on to the next step

Take a clean pot, pour a small amount of water into the pot, and then add 40 grams of sugar


After the water is boiled, the sugar slowly boils until thick and bubbling, we pour the fried Jiangmi noodles into the pot, and then use a spatula to stir-fry the Jiangmi noodles so that the sugar is wrapped around the outside of the Jiangmi noodles


When the sugar is evenly wrapped, we pour the rice noodles out of the pot and let them cool, and the sugar will turn sandy white on the outside of the rice noodles, just like the one we bought
