【Directions】

Step 1, 400 grams of ordinary flour (all-purpose flour), put it in a basin, one-third of which is scalded with 100 grams of hot water above 80 degrees, and add cold water one by one after spreading (the water absorption of flour is different, cold water is about 130-140), knead into a relatively soft and smooth dough. (Point 1, the finger cake of half soup noodles, the hot flour part will gelatinize and lose part of the gluten, which can make the finger cake softer, and it will not be hard when it is cold).


Step 2: Set the kneaded dough aside and relax for half an hour.


Step 3: To make puff pastry, add 50 grams of flour (all-purpose flour), 1 teaspoon of Sichuan pepper powder, and 8 grams of salt to the bowl and mix well. The salty point of the finger cake is more flavorful, and the salt should be given more.


Step 4: Put about 70 grams of oil in a pot, heat it until it smokes slightly, let it dry for a while, and pour it into a flour bowl in stages. Step 5: After adding the hot oil in stages, stir it into a thin puff pastry like the one in the picture and set aside.

Step 7: Take a portion of the kneaded agent and roll it into a thin dough sheet and smear it with the finished puff pastry. Step 10: Take a portion of loose dough and roll it into a cake shape.

Step 14: After brushing the oil, after the bottom surface is colored, turn over and fry the other side, and brush the oil again.
