Today, I used black rice to make a bun for my family, fluffy and noisy, the method is simple, and my family loves to eat it.


Here's how I made it:

1. Put a small bowl of black rice and a small bowl of glutinous rice in a bowl, wash it and add water to soak overnight in advance.


2. Pour out the water for soaking the rice, add a little water, and submerge the black rice for about 1cm. Steam in a pot.


3. After the black rice is steamed, let it cool slightly, add raisins to the black rice, if you like to eat sweet, you can also add some brown sugar or white sugar, you can add some red dates, mix well and set aside.


Add 5g of sugar and 3g of yeast to 4,300g of flour, stir well, add a small amount of 150ml of warm water many times, stir into a dough, and knead it into a smooth dough with moderate softness and hardness. Cover with plastic wrap and seal to proof.


5. The volume is significantly expanded, and the inside is a honeycomb structure, which is good.


6. Take out the dough, knead and exhaust, knead into long strips, and evenly divide into pieces.


7. Knead each piece of small dough slightly and evenly and roll it into a small round cake with thick middle and thin sides.



8. Scoop a spoonful of black rice filling and close it like a bun.



9. After the so-called buns are ready, put them in the steamer, cover them and let them rise again for 15 minutes.


After 10 or 15 minutes, turn on the high heat for 20 minutes, turn off the heat and simmer for another three minutes.


The steamed buns with black rice filling are ready, fluffy and soft, and they taste very fragrant.
