Ingredients: 2 pig trotters

Ingredients: oil, rock sugar, Sichuan pepper, star anise, ginger, green onions, light soy sauce, dark soy sauce, Lao Gan Ma, salt

Process:

1. Wash the pig's trotters in a pot under cold water, add cooking wine, boil over high heat without a lid, skim off the foam and cook for five minutes after the water boils, take out the blanched pig's trotters, wash them with water, drain them and set aside!


2. Pour oil into the pot, add a few pieces of rock sugar, stir-fry over low heat, and stir-fry the sugar color.




3. Pour the pig's trotters into the pot and stir-fry evenly.


4. After stir-frying evenly, add water to cover the pig's trotters.


5. Add Sichuan pepper, star anise, green onions, and ginger slices to the pot.


6. Add two spoons of light soy sauce, one spoonful of dark soy sauce, one spoonful of salt, and one spoonful of Lao Gan Ma to the pot.





7. Stir well, cover the lid and boil over high heat, then turn to low heat and simmer for an hour and a half, reduce the juice on high heat, and the delicious big pig's trotters will be cooked.
