【Cooking Method】:

(1) Clean the beans you bought home. Pinch off the head and tail, and tear off the carob tendons, which are a thread on both sides of the beans, if the carobs are tender enough, there will be no tendons. We call this a bean here, and in some places it may be called lentils or green beans.


(2) Cut the beans into small pieces of about 3cm. This makes it easier to sauté and easier to eat. You can also break it directly by hand.


(3) Boil water. Add a teaspoon of salt and a few drops of peanut oil to the water. Prepare the blanched beans. Salt is added to the vegetables when they are blanched to add some base flavor. A little cooking oil is added to make the green vegetables greener in color.

After the water in the pot is boiled, blanch the beans for half a minute.


(4) Take out the beans and rinse them with cold water to cool down the beans. In order to keep the taste of the beans crisp and not particularly soft and collapsed. Then drain the beans and set aside.


(5) Peel a head of garlic and clean it. Cut into minced garlic.


(6) Heat the oil, heat the peanut oil, and then put out three-quarters of the minced garlic. Stir-fry until fragrant.


(7) Add the beans and stir-fry evenly.


(8) Add a tablespoon of oyster sauce. Add a pinch of salt and continue to stir-fry. Be careful not to use too much salt, as oyster sauce is inherently salty. Add half a teaspoon of sugar to freshen.


(9) In the process of frying, if the pot is too dry, it is necessary to add some cold water. Stir-fry until the beans are broken. Stir-fry and serve.  


(10) After the beans are fried, add another quarter of the minced garlic to make the garlic more fragrant. Add another half teaspoon of chicken essence to increase umami. (If you don't like to eat chicken essence, you can also leave it out.) Finally, add a small spoon of sesame oil to increase the fragrance, brighten the color, stir-fry evenly, and put it on a plate.


A delicious dish of roasted beans with oyster sauce is complete. The color is emerald green, plain and delicious, especially suitable for the summer season.
