Then put the egg white on the side for later use, beat the egg yolk with chopsticks or silicone spatula, then put in 30 grams of milk, stir well, and then sift in 30 grams of low-gluten flour
Stir the egg mixture and flour well and set it aside, if you are afraid of air drying, you can cover it with a lid or plastic wrap, then take out the egg white, add a few drops of white vinegar (or lemon juice), and beat it with a whisk
When the egg white is beaten, the sugar is added 3 times, the first time is when the fisheye bubble, the second time, the delicate small bubbles, and the third time is when the egg white is about to be formed
Then take out the basin of egg yolk liquid, mix the egg white egg yolk (first take one-third of the egg white into the egg yolk liquid, turn it evenly, take one-third, and finally pour the mixed into the basin of egg white, stir evenly), and the mixing must be slow, otherwise it will be easy to defoam
Finally, we can mix evenly, we will preheat the electric baking pan, 2 gears are OK, no need to apply oil, use a spoon to take an appropriate amount of cake batter and pour it on the electric baking pan, try to round it
Then take out the lid of the pot and cover it, so that it will cook faster, because the cake is thicker, do not use the lid of the electric baking pan, otherwise it will stick
After simmering for 2-3 minutes, open the lid and pour some cake batter on top of the original cake batter, as shown below
When the cake is set and turned over so that both sides are browned, it's good to go
Then remove from the pot and put on a plate
