  Stir-fried minced  meat from sauerkraut

Ingredients: 400 grams of rape, appropriate amount of pork belly, 2 cloves of garlic, a little ginger, an appropriate amount of spicy millet, 1 green onion, an appropriate amount of salt, 3 tablespoons of white vinegar, 2 tablespoons of cooking wine, an appropriate amount of pepper, 1 tablespoon of Yipinxian soy sauce, a little sugar, and an appropriate amount of water starch


1. We first prepare the required ingredients and choose fresh rape with fresh appearance and no yellow leaves; Pork belly is the most fragrant, and other parts of the meat can be substituted; Millet spicy is appropriately adjusted according to your taste preferences; Garlic and ginger for seasoning, then prepare the other seasonings 


2. Then pick off the leaves of the rape one by one and clean them; Cut the pork belly into minced meat; Finely chop the garlic, green onion and ginger; Millet spicy cut into chili rings, you can also use kitchen scissors to cut 


3. Add an appropriate amount of water to the pot, add a small spoon of edible salt after the water boils, and then add 3 tablespoons of white vinegar (if you don't like too sour, you can appropriately reduce the amount of white vinegar), stir evenly and put in the washed rape, turn off the heat after the water in the pot boils again, cover the lid and simmer for 30~40 minutes

5. Take the sour rape out of the pot and cool it naturally, do not rinse it with water, wait until the sour rape cools to room temperature, and then tear it into small strips and put it on a plate for later use 


6. Start another pot, first add an appropriate amount of base oil, put in the minced meat and stir-fry over low heat until it completely changes color, and then cook cooking wine along the edge of the pot to remove the smell and increase the flavor 


7. Add minced garlic, green onion, ginger and millet spicy, and continue to stir-fry over low heat until fragrant 


8. Then cook the fresh soy sauce along the edge of the pot and stir-fry evenly, which can make the sauce more fragrant 


9. Put the processed sour rape into the pot, stir-fry evenly with the minced meat, add salt and pepper to taste according to your own taste, and a little sugar to synthesize the sour taste and stir-fry evenly 


10. Finally, add a little water starch to make the seasoning thicker, and evenly wrap it on the sauerkraut rape, so that the sauerkraut will also add more flavor 


11. The sour and spicy stir-fried minced meat of sour rape is completed, and those who like to eat spicy flavor can also add an appropriate amount of pepper oil, so that the taste is richer 


Tips:

1. Add salt and white vinegar to the pot before blanching the rape, stir evenly and then put in the rape, it should be noted that the rape should be covered and simmered for 30~40 minutes after being put in.
