Steps:
1. Soak the vermicelli in water in advance, and soak the vermicelli until it becomes soft. Do not soak the vermicelli in hot water, the vermicelli is easy to break. Finely chop the garlic and chop the shallots.
2. Prepare a clean brush, or a toothbrush is also fine. Carefully scrub the abalone, scrub the black sticky on the surface and around the abalone, and brush off the black substance on the abalone meat. Brush the shell as well. The abalone you buy will have a black mucous membrane on it, which needs to be cleaned.
3. Then, insert a spoon along the gap between the shell and the abalone meat, scoop up the abalone meat, and remove the abalone meat.
4. Remove the black intestines of the abalone, and the sand spit of the abalone, wash the abalone, and drain the water.
5. Cut the abalone meat into a cross knife, which will make it easier to cook and absorb the flavor, and cut 2/3 of the depth into it, don't cut it thoroughly.

9. Scoop out the fried minced garlic and pour it over the arranged abalone. Add water to the steamer and bring to a boil, put in the plate with the abalone, cover the pot, and after the water boils, steam for 7-8 minutes. When the time is up, remove the plate.
10. Drizzle a little steamed fish soy sauce on the abalone, then sprinkle with chopped green onions, add oil to the pot and heat it, and pour a little hot oil on the abalone respectively to bring out the fragrance. A plate of garlic-scented abalone is ready.
