Preparation of three types of oyster mushrooms

1. Shredded oyster mushrooms in red oil

Step 4: After the oyster mushrooms are cooled, tear them vertically into slender filaments, then squeeze out the water from the shredded oyster mushrooms, put them in a clean dish, and place them on top with shredded carrots.

2. Pleurotus eryngii mushrooms with salt and pepper


【Ingredients】Pleurotus eryngii, flour, starch, salt, egg, peppercorns, oil, water


【Method】Step 1: Select fresh oyster mushrooms with a snow-white color, cut them into slices with a thickness of about 1 cm along the length, and then cut into strips with a length of 5 cm and a width of 1 cm.

Step 2: Put 4 tablespoons of flour, 2 tablespoons of starch in a bowl, then add 1 egg and an appropriate amount of water to make a batter with the consistency of old yogurt, then add 1 teaspoon of salt and 1 teaspoon of Sichuan pepper powder, mix well.

Step 3: Pour an appropriate amount of oil into the pot and heat it, then dip the oyster mushroom strips in the salt and pepper batter, put it in the oil pan, and the oil temperature is about 7 into the hot, which is the state that the oyster mushrooms float up immediately after being put into the pot without sinking to the bottom.

Step 4: Put in all the oyster mushroom strips in turn, fry them until the surface is crispy, and after all the oyster mushrooms are fished out, heat the oil for a while, fry them again, and the salt and pepper oyster mushrooms are ready.

3. Thai sweet and spicy oyster mushrooms


【Ingredients】Pleurotus eryngii, garlic, shallots, Thai sweet and chili sauce, oyster sauce


【Method】Step 1: Select the snow-white and fresh oyster mushrooms, cut them into slices with a thickness of 5 mm, a width of 3 cm, and a length of about 5 cm along the length, and then gently scratch an oblique knife on one side, taking care not to cut off the oyster mushrooms.

Step 2: Chop some chopped green onions and minced garlic for later use.

Step 3: Heat oil in a frying pan, fry the oyster mushrooms in a pan until golden brown on both sides, and set aside.

Step 4: Add 2 tablespoons of Thai sweet and chili sauce and 1 tablespoon of oyster sauce to the bowl, then add an appropriate amount of water and stir well to make a sauce for later use.

Step 5: Pour green onions and garlic into the pot and stir-fry until fragrant, then add Thai sweet and spicy sauce until the sauce is thick, then add the fried king oyster mushrooms, mix well and you can get out of the pot.
