Ingredients: 2 chicken thighs, 2-3 slices of ginger, 1 green onion, 1-2 cloves of garlic, 4 tablespoons of light soy sauce, 2 tablespoons of cooking wine, half a tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, appropriate amount of honey (sugar).

Here's how:

1. Prepare the chicken thighs to wash, check the fine hairs on the surface of the chicken skin, if there is any, pull them out, take a sharp knife, separate the chicken thighs from the bones, and try to keep the chicken intact sheets. (I prepared one more for stir-frying, so I deboned them together)

Second, find a few toothpicks or sharp tools, continue to dig deep on the skin of the chicken, after piercing, and then cut it vertically with a knife in the thicker part of the meat, don't cut it thoroughly, in order to quickly flavor the chicken.

3. Find a container to put the chicken in, pour cooking wine, light soy sauce, pepper, shredded ginger and green onions, mix well, and marinate for about 1 hour.

5. Stir and melt 4 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of oyster sauce, 2 tablespoons of honey (white sugar is also acceptable) and a little warm water into a bowl while frying the chicken thighs. 6. When the chicken thighs are colored on both sides, you can pour in the sauce, cover and simmer for about 5-8 minutes over medium-low heat.

7. First take out the chicken and cut it into strips, then pour the soup in the pot into the chicken after it is thicker.
