2. Prepare a little oil in the pot, add a few grains of rock sugar and fry until bubbling, and then add the pig's trotters and stir-fry to let the sugar evenly wrap the pig's trotters.
3. Cut the green onion and ginger into the pot and stir-fry until fragrant.
4. Prepare a bowl of boiling water and a can of beer and put it in the pot. Remember to remember: be sure to pour boiling water first, if the beer is put into the pot first, the meat will suddenly be cold and become firm and not easy to stew, and the beer can remove the fishy smell, and it will also have the effect of freshness and tenderness. The amount of water/beer should not exceed the meat, and if you have to add water, you must try not to add water, and if you have to, you must heat the water. At this time, if you forget to soak soybeans like me, you can rinse the soybeans and put them in the pot early. If you soak the soybeans in advance, then pour them into the pot halfway.
5. Take advantage of the time when the pot is boiling water, put in the ingredients (star anise, grass fruit, dried red pepper, tangerine peel) and light soy sauce, after the water boils, turn to low heat and slowly simmer for 1 and a half hours-2 hours, or put it in the pressure cooker for about 30-40 minutes to stew (if you choose a pressure cooker, then add half of the water in front of the meat).
