Today, I ate noodles at home, bought a few large ribs, and made a braised pork rib as a topping.
Ingredients: 500g large ribs, 1 egg

Seasoning: cooking wine, salt, sugar, dark soy sauce, light soy sauce

1. Wash the large chops, and beat the large chops on both sides with a meat hammer to destroy the tissue fibers of the large chops, so that they are tender but not firewood. Place the pat in a bowl and set aside.
2. Next, season the ribs, add a little cooking wine to remove the smell, a little sugar to improve the freshness, add some dark soy sauce to color, beat in a chicken egg, then add a few slices of ginger to remove the smell and increase the flavor, and finally add an appropriate amount of starch. Mix evenly and marinate for 10 to 15 minutes.
3. When the marinating time comes, we fry the large ribs in a pan until they are set on both sides, and we take out the oil.
4. Leave some bottom oil in the pot, add ginger slices and green onions and stir-fry until fragrant, add cooking wine, light soy sauce and sugar to stir-fry after stir-frying, and then add the fried large ribs and stir-fry evenly.
5. After stir-frying evenly, add an appropriate amount of boiling water, cover the pot and let it simmer for about 10 minutes, so that the large ribs can fully absorb the flavor.
6. When the time is up, open the lid of the pot, collect the soup and put it on the plate.
A tender and flavorful braised pork rib is ready, and it is very good to eat with rice and noodles.
