Dough: 300 g plain flour, 3 g yeast, 5 g sugar, 170-180 g warm water.

Filling: 120 grams of brown sugar, 20 grams of cooked sesame seeds, 30 grams of flour.


300 grams of ordinary flour add 3 grams of yeast, 5 grams of sugar to promote fermentation, according to the different water absorption of the flour used, with about 170 grams -180 grams of warm water and noodles, with warm water is to speed up the speed of fermentation, the water temperature should be slightly warm, otherwise the yeast will be scalded to death. The final kneaded dough is moderately soft and hard, so it tastes good. Cover the dough and leave.


Prepare the filling while the dough is rising: put 120 grams of brown sugar, 20 grams of cooked sesame seeds (black and white) and 30 grams of flour in a bowl, stir well, and crush the brown sugar with a spoon if it clumps.

Note: Whether it is black sesame seeds or white sesame seeds, they must be fried before use, so that the taste is fragrant enough. You can also use cooked peanuts instead, although each has its own taste, but it is very delicious, and you can take turns to do it every time you change the pattern to prevent your family from getting tired of food. The purpose of adding flour is to increase the viscosity of the brown sugar when it is heated, so that it does not run everywhere.


Thanks to the addition of sugar and the use of warm water and dough to shorten the fermentation time, the dough has risen to twice its size.


Take out the dough, knead it evenly and exhaust it, knead it into long strips, and cut it into 12 small agents of uniform size, there is no fixed amount, according to your hobbies and habits, I prefer the small and delicate type.


Take a dough incision upward, arrange it into a cylindrical shape, press it flat, roll it into a dough sheet with thick middle and thin edges, wrap it in an appropriate amount of brown sugar filling, and close it with the method of wrapping buns.


Close the mouth downwards and press it flat into a small round cake, not too thin, too thin brown sugar is easy to expose through the crust, and the cake does not look beautiful. Cover with plastic wrap and let rise for 15 minutes.


In a frying pan without brushing with oil, put in the fermented cake blank and sear it over low heat.


Turn it over several times until both sides are golden brown, press with a shovel and quickly rebound, and the cake is cooked. The aroma of brown sugar and sesame seeds mixes with the aroma of the noodles.


The noodles are put on the plate like a stack of arhats, and they are so chubby and cute.
