Ingredients Required:

Pleurotus eryngii, shiitake mushrooms, coriander, oyster sauce, light soy sauce, sugar, white pepper, sesame oil, cooking oil


Make peace first:

Put flour in a basin, add a little salt, mix the dough with cold water, mix into a dough with moderate firmness, cover and let the dough rise for 30 minutes.

The dough of the dumplings should not be too hard, just like the saying "soft dumplings, hard noodle soup (noodles)" is the truth.


1. Wash the oyster mushrooms, shiitake mushrooms and coriander; Cut into small cubes.


2. Mix a sauce:

In a bowl, add oyster sauce, light soy sauce, sugar, white pepper and water.


After bringing to a boil the seasoned sauce, add an appropriate amount of water starch to thicken and boil until viscous. Set aside.


3. Put oil in another pot, add diced diced shiitake mushrooms and stir-fry, stir-fry until soft, and then put out for later use.


Add a little base oil to the pan and stir-fry the chopped oyster mushrooms.


The goal is to drain the water inside.


Serve and sauté shiitake mushrooms together.


4. Put the boiled juice into the processed shiitake mushrooms and oyster mushrooms in batches.


Add the chopped coriander and drizzle in a little sesame oil.


Mix well.


5. Take out the dough after waking up and knead it on the cutting board.


Make a uniform size of dough, roll out the skin, and wrap the filling.


6. Put water in the pot, add a little salt, and put in the dumplings after the water boils.


Cook and serve.


Tips:

Since shiitake mushrooms and oyster mushrooms have been processed in the early stage, they are easy to ripen; Therefore, do not cook it for too long.
