Stir-fried king oyster mushrooms
Ingredients: 1 king oyster mushroom, 1/2 red pepper, 1/2 green pepper, 2 cloves of garlic, 1 shallot, 1 tablespoon of fresh soy sauce, appropriate amount of salt, a little pepper, 1 sugar
1. Some of the oyster mushrooms I bought are too long, and it is recommended to buy shorter ones for better processing, as shown in the picture above.
2. Clean the oyster mushrooms and divide them in half from the middle (if they are short, you can ignore this step), and then tear them into strips for later use. This step reminds everyone to be patient when tearing into strips for a better taste, not to be thick for a while and thin for a while, and not to wash after tearing into strips, as shown in the picture above.
3. Red pepper and green pepper are washed and cut into shreds, shallots can be cut into segments or shreds, garlic slices, because my son can't eat spicy, I use large persimmon peppers, and if you can eat spicy, you can replace the red and green peppers with millet spicy and small green peppers, as shown in the picture above.
4. The ingredients are ready, we light the fire to heat the pot, directly put in the processed king oyster mushrooms and turn to low heat and stir-fry, remember not to put oil and any seasonings! Just use low heat to stir-fry slowly, as the oyster mushrooms slowly soften, the water will also be fried, do not stop at this time, continue to stir-fry until there is no more moisture in the pan, as shown in the picture above.
5. Put the stir-fried oyster mushrooms out for later use, at this time the oyster mushrooms have no original jerky taste, and have the taste of a dry pot dish, which is particularly fragrant, as shown in the picture above.
6. Stir up the pot again, put in a piece of lard (vegetarian dishes are better fried with meat oil), and corn oil can also be used if there is none, as shown in the picture above.
7. After the lard is completely melted, add the shredded green onion and garlic slices, and stir-fry over low heat to bring out the fragrance, as shown in the picture above.
8. Add the red and green pepper shreds and continue to stir-fry, as shown in the picture above.
9. Add a tablespoon of Yipin fresh soy sauce and cook it along the edge of the pot to bring out the rich flavor of the sauce, as shown in the picture above.
10. After the fragrance in the pot comes out, then put in the freshly fried oyster mushrooms and stir-fry evenly, add an appropriate amount of salt and white pepper to taste, throw away the white sugar to improve the freshness, and stir-fry evenly, as shown in the picture above.
11, this vegetarian fried king oyster mushroom is ready, the aroma is tangy, the taste is strong, the more you chew, the more fragrant it is, it is better than meat, and it is very simple and convenient to make, try it!
Tips
1. Wash the oyster mushrooms and then tear them into small strips, which is better than tearing them into strips and then washing them, and the taste will be better.
2. Be sure to stir-fry the water in the oyster mushrooms first, so that the taste of the oyster mushrooms will be stronger and more fragrant.
