Ingredients: 300 grams of sweet potatoes, 300 grams of flour, 3 eggs, 4 grams of yeast, appropriate amount of black sesame seeds.

Method:

1. Wash the sweet potatoes, slice them with plastic wrap and cook them in the microwave, or you can steam them in a steamer until they are soft and rotten.

2. Crush the sweet potatoes into a delicate puree with a small fork, beat in three eggs, choose a larger egg, if the eggs are too small, use 4 eggs. Add the eggs and stir.

3. Stir the eggs and sweet potato puree into a paste, then add the yeast and stir well.

4. Finally, add flour and stir into a large flocculent shape, then mix the dough with your hands.

5. Mix sweet potatoes, eggs, and flour into a dough, which is a little sticky when operating, and you can apply some oil to your hands and knead it, so that it also moistens the dough. The dough is reconciled, covered and risen. If you do it at night, you can refrigerate it now, and you can get up early the next morning and you can do it.

6. Ferment the sweet potato dough until it is twice the size, and the dough is very soft.

7. Find a small basin of the right size, with better thermal conductivity, I use a cake mold, which is covered with oil paper to demold, or brush with oil, pour in the good batter, smooth it, ferment for another 20 minutes, sprinkle with sesame seeds to steam.

8. Bring the water to a boil in the steamer, put in the cake, steam it for half an hour on high heat, and then open it after simmering for a while.

9. Take it out of the pot directly, it has the effect of oiled paper, it is very simple and easy to operate, and you can cut it into pieces.

Tips:

This cake is very easy to operate, sweet potatoes do not need to be too delicate when rolling, a little slight particles do not affect the softness of the cake, three eggs choose a large one, I use each net weight of about 52 grams or more, if it is a small egg, use four.

No need to add sugar, sweet potatoes themselves are sweet, so, the cake is slightly sweet is very good, if you have friends who like sweetness, you can add 20 grams of sugar to sweeten when stirring the sweet potato puree.

When steaming at the end, pay attention to brush the mold or small basin with oil, or pad oil paper like me, so that the mold removal is simple. The steaming time should be sufficient, and it will be delicious only when it is steamed thoroughly.
