Here's how I made it:

1. Add a spoonful of salt to the flour and mix well to increase the strength, add a small amount of water many times, stir into a dough, and knead it into a slightly harder dough. If you don't want to make your own noodles, you can also buy ready-made noodles.

2. Prepare some shredded lean pork, add an appropriate amount of shredded ginger, salt, light soy sauce, dark soy sauce, starch to the shredded meat, grasp and mix evenly, and add a little cooking oil to grasp and mix evenly to prevent sticking. Marinate for 15 minutes.

3. Shred the oyster mushrooms.

4. Slice some shredded carrots.

5. Cut some shredded green peppers.

6. Wake up the dough and press it into noodles.

7. Add water to the pot, add a spoonful of salt, boil the water into the noodles, and cook the noodles. Remove and let cool and boil.

8. Add oil to the pan until the shredded meat is stir-fried. You don't need to fry the meat for too long, just cooked. Set aside.

9. Add oil to the pot, stir-fry the minced garlic until fragrant, pour in the shredded carrots and stir-fry for a while.

10. Add shredded green pepper and stir-fry evenly.

11. Stir-fry until medium-rare, add the oyster mushrooms and stir-fry evenly. At this time, salt, light soy sauce, dark soy sauce, sugar, balsamic vinegar, stir-fry evenly.

12. After frying, pour in shredded meat, add a little starch water, and fry until the soup is viscous.


13. Pour the fried oyster mushrooms on top of the noodles, mix well and serve.
