 Stir-fried tofu skin with leeks

Ingredients: 1 handful of leeks, 2 tofu skins, half a red pepper, 1 slice of ginger, appropriate amount of salt, 1 tablespoon of fresh soy sauce, a little sugar


1. First of all, pick and wash the leeks and cut them into small pieces; Cut the tofu skin into narrower strips; Remove the seeds and tendons of the red pepper and cut it into shredded peppers; Ginger cut into shreds; The tofu skin I bought today is relatively thin, but I personally prefer a thicker one, so you can choose according to your taste


2. Add an appropriate amount of water to the pot, add a small spoon of salt after the water boils, then blanch the cut tofu skin for about 1 minute, squeeze out the water and set aside, the taste of the blanched tofu skin is softer and more tender 


3. Add an appropriate amount of base oil to the pot again, and stir-fry the shredded ginger when the oil temperature is not very high


4. Then put the dried tofu skin into the pot and stir-fry over medium-high heat, here you should stir-fry for a while, and stir-fry the water vapor after blanching the tofu skin


5. After the tofu skin is dried in water, then add leeks and red pepper shreds, and stir-fry quickly and evenly 


6. Because leeks are easy to cook, don't fry for too long, start seasoning after simple stir-frying, add an appropriate amount of salt, 1 tablespoon of fresh soy sauce, a little sugar, stir-fry evenly so that the seasoning is completely melted and fused with the dish, you can turn off the heat and put it on a plate 


7. A delicious and mellow fried tofu skin with leeks is completed


Tips:

1. The tofu skin must be blanched first, and the taste will be harder if it is directly fried.

2. After adding leeks, you can simply stir-fry, don't fry for too long, it will affect the fresh and tender taste of leeks.

3. If you like spicy food, you can add an appropriate amount of dried chili peppers to stir-fry.
