1. To make this cheek meat, I specially bought 4 catties of front leg meat. Recently, the price of pork has been unstable, and when I bought it last month, it was still 15 yuan per catty, and now it is more than 20 yuan per catty.
After buying the meat, cut it into larger pieces and blanch it directly in a pot under cold water
The method I made of this cheek meat is the method here in Hancheng, Shaanxi, but there are some places in Shaanxi where the cheek meat is not blanched, and the method is not the same. After the water in the pot is boiled, boil for about 5 minutes, turn off the heat, remove the meat and wash it again.
Next, cut all the meat into small pieces or small slices, and separate the lean and fatty meat into bowls.
Chop some green onions and ginger slices and set aside.
2. Stir-fry the pork.
Pour oil into the pot, add the fat you just cut into it when the oil is slightly hot, turn to low heat and fry the oil in the fat meat
Refine the oil from the fatty meat, and when the fat is slightly charred, pour in the lean meat and stir-fry.
When the meat is fried until the color is white, a small amount of baijiu is added to it, and the purpose of adding baijiu is to remove the fishy smell.
After stir-frying for a few minutes, add the ginger slices and green onions, add star anise, cinnamon, and bay leaves and continue to stir-fry until fragrant.
Then add an appropriate amount of light soy sauce and a small amount of dark soy sauce and stir-fry.
After stir-frying well, add boiling water to it, and add boiling water here just enough to submerge the meat.
Finally, cover the pot and simmer over low heat for about 30 minutes.
After 30 minutes, add a spoonful of thirteen spices to the pan and add salt to taste.
